Are people adding Fermcap S after fermentation begins? I have had some issues lately with excessive foaming and I'd like to add some but it seems like it might be risking infection.

Yes you can, I've never had a problem adding it to the fermenter when need. It is in a sealed container after all.

True but it doesn't get re-sterilized like all the rest of the equipment. Guess I'm being overly cautious or paranoid.

Ding ding ding.....;)

It's mention in the instructions that it can be added to starters or the fermenter, millions of folks besides me do it all the time, with no issues.

I don't use the eyedropper as an anal probe or anything, just open up the bottle, squirt a dew drops in and the seal the bottle. I'm pretty sure it's gonna be fine.

We use cough medicine or malox from open bottles all the time and don't get food poisining from it, do we?

*shrug*

We aren't worried about stuff that makes us sick as much as stuff that can ruin the flavor of the beer.

But yes, the chances are EXTREMELY small that you would get anything in there that would hurt the beer. I've added it to a fermenter once, and a few times in a starter and it's done just what it's supposed to with no infections.

These days I often put it in a quarter cup of water and bring it to a boil and then add it to the fermenter as I rack the beer on top of it. However, in the past, I've put it right in the fermenter from the bottle and never had a problem.

I add it to my fermenter for every batch. No infections or off-flavors detected.
I also add it to starters where the probability for voluminous kreuzen his high.

So I was thinking of trying this for the KTG RIS was wondering on the differences in fermentation? Is there no krausen ? Smaller krausen? How is the head retention in the beer? I appreciate the input....

I use it all the time, and have no problems with the beer. Head retention is fine.

You will get less kraeusen, but it's not a guarantee that you will not need a blow-off tube. Belgian strains laugh at FermCap.
