10am....less than 24hrs in...getting airlock bubbles every 3-4secs.....so the churn is on baby. My S04's in cooler weather are typically done in about 7days....so gonna keep a close eye on this bad boy...for right time to commence a cold crash...something in the area of 1.015ish I'm thinking. [emoji41]

Day4....airlock bubbles every 4-5secs. Notice thru my opaque 30l Speidel there's an approx 1inch krausen on the top....don't really ever see this with my fav S04.

I tried S-04 for the first time this week, with a gallon of Kirkland Signature. Here it is after 12 hours. I was a bit surprised! I pitched it at room temp (probably around 80F) into a 4-liter shochu jug, then moved it to its current location at 68F a few hours later.

Day5 and just checked SG....its already 1.006...Yowza! Tossed Speidel in fridge to cold crash. ABV ~7.45% currently. With various fruit flavor conditionings sweetness should be in my happy zone [emoji111]
 
You might try Hothead or Voss Kveik. I just finished brewing my first beer with Voss Kveik and am totally impressed with it. I started a gallon of cider with some of the trub and it's about ready to bottle (much faster than with wine yeast or most ale yeasts). I don't smell anything "off", but I haven't tasted it yet. Maybe tonight...

I've also had very good luck with Cote des Blancs, but it's not nearly as fast.
 
Day3 cold crashing...

Still bit cloudy...so gonna go another couple days...

Taste/smell is pretty bland compared to my fav S04...hoping some aging will bring it back. For me....S04 ciders taste/smell great immediately after cold crashing.

Semi-dry at this point since I missed my SG crash point by a bit.

Keep posting updates, following as I plan on starting a new batch in a few days and am looking for the right hot weather yeast as well.
 
Cold crash done..lees pretty darn solid at bottom...cider bit cloudy still.....tossed all back into 1gal containers & added fruit concentrates etc

- Tart Cherry Cinammon
- Pineapple
- Cranberry
- Blk Cherry Cinnamon
- Plain (future flavoring)

Plus a couple Qts....pineapple cinnamon jalapeno & Cinnamon Clove

Yet to be determined how this summer S05 compares to my fav cool weather S04 [emoji41]

I've also had very good luck with Cote des Blancs, but it's not nearly as fast.

I have only used Cotes Des Blancs so far (been making cider a few months) and it always finishes up for me in ~7 days and that's including batches I made with almost 8% ABV - I do live in the south and it's ~77F in my fermenting room though.

I know it slows down at lower temps.
 
Early returns...

S05 is ok..not nearly as good as my fav S04. In all fairness I did miss my FG target because it was churning & burning so fast.

I'm a semi-sweet fan.

I'm looking forward to cranking out some S04 batches using locally pressed juice from the many cider mills around my house.
