What should I do with my extra gallon of Saison

  • Dry hop with sterling

  • Dry hop with montueka

  • Dry hop with something else

  • Brett and oak cubes

Just racked a saison but i have roughly a gallon left over. I put the extra into a 1 gallon glass carboy that i used for the starter. I kind of want to throw a little dry hop in there but i'm not sure. It's FG is roughly 1.004.

It currently is a yeast forward beer at about 18 IBU's and 1.004 FG so it is basically wide open. So, question is what style would you go for? it has a high ABV for a saison. Around 7%. So I could do a blonde or a huge, extra dry belgian pale ale or any number of things really. I figured I would ask HBT because I've fretted about this beer for a month now and I'm kind of tired of worrying about it. I've got a single hop APA coming up with sterling hops. I'd like to use those for convenience sake, but some extra ingredients are by no means out of the question. Oak cubes and brett are contenders as well.
 
I made a Saison with Motuekas added at flameout. It's nice, a little tropical fruit mixed with farmhouse rustic character.

That is encouraging. I ended up using the Motuekas. I still might bottle it with brett and some really nice honey left over from the brew.
