welcome to the hobby and to HBT. Sorry your initial batches were not great but you are on a very steep part of the learning/experience curve and I'd expect your beer will improve quickly.

Yeast is a good place to be focusing your attention. Yeast meaning using enough viable yeast for your batch, however you get there, while paying attention to and controlling pitching and fermentation temperatures, and perhaps wort oxygenation all combine to provide a reliable quality fermentation.

Water is right up there with yeast. At least starting out making sure you are brewing with water that is free of chlorine or cholamines and has some but not too much mineral content should get you in the right ball park. The old if it tastes good to drink it will make good beer is sort of right. At least so long as you make sure to eliminate any chlorine.
