I bought (3) 2 gallon packs of cider to brew 5 gallons of cider. I noticed that my pot, brew bucket and carboy could accommodate all 6 gallons I bought so I bumped the recipe to use all six. One thing I did not consider is that the yeast packet I bought was for only 5 gallons. Is this ok? I checked it with the hydrometer after 2 weeks and it appears that all the sugar has fermented out.
 
Yep your fine, a single pack of yeast will handle 6 gallons. If as you noted all the sugar fermented out then i can only assume your yeast did the job.
 
One pack was enough.

I doubt it's done fermenting after just 2 weeks though. Check gravity, then wait another week. Check gravity again. Repeat until it stays constant. Patience is a requirement with cider. More patience than most of us would care to give. But patience is rewarded. If you are kegging, it wouldn't be a big deal if you kegged it early. But if you bottle it early, KABOOM. Be careful.
