I was just wondering if I leave my brew in primary for an extra week or so after it is finished fermenting to clear a little will I there still be enough active yeast to be able to bottle condition /carb

Absolutely. I can personally attest to over two months in secondary at lagering temp (basically long term cold crashing) and the beer still carbed up fine.

I've done 6 wks in primary and cold crashed, carbed up fine.

I'm also just curious, my OG was 1.042 and after 5 days the gravity was 1.010 and has been the same 3 days in a row is she good to go??, Iv never had a brew stall/stop fermenting so early
