So I am going to make an IPA using El Dorado and Azacca hops. Would you use the same amounts of each in your hop schedule? or does one ovre power the other?
 
I would go lighter on the El Dorado personally.....however I wouldn't use any of them in a boil, straight whirlpool and dry-hop. I bet if you did the following it would turn out delish.

.75oz Columbus at 60 minutes
3oz Eldoardo at 175 degrees for 30 minutes
3oz Azacca at 175 degrees for 30 minutes

2oz Eldoardo for 5 days
4oz Azacca for 5 days
 
I've late hopped a cream ale with El Dorado and really liked the results. Azacca I've yet to be impressed by and just use it for bittering now. It's not bad but has a sort of nondescript plain hop character. If I was mixing the two I'd use the Azacca at FWH or 60min and the El Dorado anywhere from 15min to whirlpool.
