BTW. If you ever want to do a brett conditioned beer, just add brett to your racking bucket, no extra sugar, and bottle. The Brett will eat any extra residual sugars to carbonate. Just don't bottle with brett until your gravity gets down around 1.008-1.010. If there's more sugar than that, you can have problems with bottle bombs.
