Im out of orange peel and i want to know if its ok to just wash fresh orange peel and let it dry out for later use. Or is there a special way to dry it.. i just let it set on my counter for a week or so

My plan is to sanitize the microplane, oranges, and my hands and zest the lime over the wort once the wort has cooled. This way there is no chance of infecting the beer and I get to keep all the light boiling compounds in the orange. More work but who cares, that is supposed to be what brew day is for!
