Have my double IPA in the secondary and it has been clearing and aging for a little over a month now in there. It tastes great and is definitely drinkable now. I have to bottle it this weekend because i need it ready for my friends wedding in 3 weeks. I dry hopped with pellets and most of the hops have settled to the bottom however there is still a tiny bit still floating on top. Are you normally supposed to wait for it all to settle to the bottom? Is it "finished" dry hopping once everything has settled?
 
I've always just left the hops in for as long as I needed to (in order to get the amount of aroma I wanted). Then when racking (to the bottling bucket or keg) just try to rack around the "floaties".
 
If you have a fine mesh hop bag you can sterilize it and put it over the end of your racking cane. I do it all the time - works great.
 
I was planning on racking around the hops but just didn't know whether you were supposed to wait until all the hops settled to the bottom.
