I plan on making a starter on Tuesday for a Dopplebock and I have this leftover spary malt extract from an old extract kit. I am not sure how old it is. Does it look too caked to use?

Spray malt has a very long shelf life. Even if it was rock hard from moisture getting into the bag it would still be good to use. Harder to get the rock pieces to dissolve but it is still as fermentable as fresh and powdery. Sugar is a natural preservative.
