Made an Octoberfest beer. Built up a large 2 stage starter of WLP820 (octoberfest yeast) and pitched it, but after 3 days, no activity. Wished I researched it online, because its a finicky strain with a notoriously sluggish start.
But I panicked, quickly built up a starter of wlp810 (cal common) and pitched it this morning. Trouble is, the Octoberfest strain has started to take off. So now Ive got 2 active strains in my beer. What can I expect?
 
Beer, it will be beer. Expect it to become the best beer you ever made, with the big drawback that you'll never be able to reproduce it again.
 
you pitched two clean yeasts, for a lager. usually one strain overcome te other in fermentation, but in bot cases te beer will be clean as a lager should be (also California is very lager-like). So, I would not worry and wait for a good beer.
 
You can expect a very unique batch of beer. I had made a double pitch batch with Fermentis S04 and Mauribrew Ale 514, believe me, it was one of the best beers. Bottle conditioning for 6 weeks made it even better.

Using brulosopher's lager method- after half attenuation had been reached, I slowly ramped up temp in chest freezer til it got to about 18.5C. Let it sit for 5 days. Hit final gravity at 1.011 and slowly ramped down to 0 for cold crash. Fined w gelatin for 48 hours and then bottled.
Beer's looking good! It finished around 6.7% (higher than expected) so one of the yeasts definitely did a great job! Will update again in 2 weeks when I finally get to taste!!

Tasted like- well it tasted like an Octoberfest beer with a touch of cal common! Awesome malty flavor, a nice dark lager. My only regret is that I'll prob never be able to duplicate it again. Thanks to all for your help and support.
