Thank you, Yooper. Thank you for teaching me how to brew the nectar of the gods! It came out AMAZING. :drunk:

It's still one of my favorites! lschiavo and I made it together this summer, and I drank my half too fast so I went over to his house on Labor Day weekend and kicked his keg! :drunk:

I for 1 would like to know how your DFH clone turns out.

Please keep us posted. I love many DFH brews, and this is one of them.

I also did a DFH EXTRACT clone, Raison-D'etre . I had very, very great results.

If you also like Raison-D'etre , Be sure to give this recipe a shot. I'm sure you wouldn't be disappointed with it!

Cheers :mug:

Just a few things to note..... this was my 2nd brew and my first time using whole leaf hops for the Amarillo. Yeah ummm... that didn't work well. Everything was fine up until flameout. The leaf hops clogged everything and I ended up pouring the final gal or two into the fermenter uncooled. Lots of things touched other unsantized things and I'll be lucky if something doesn't go bad.

On the other hand, tasting the hydro sample produced a very familiar flavor! I am very impressed with this recipe! If I do have an issue I will definitely be trying this one again.

First get yourself a hop bag, it's just a small mesh bag for your hop boils they sell them at lhbs. I personally use them and you get the same flavor out of your hops as just tossing them in.

Your beer will probably turn out fine again let me know. This will be a future recipe if extract version is the money.

I have to jump in on this. I've been subscribed to this thread, probably since the beginning. I finally brewed this (extract) 3 weeks ago. I just racked to secondary for dry hop, took a gravity reading, 1.014,and sampled. Two words...DA-YUMM!!! The wort really tasted good! The aroma was already good as well and I just put some fresh Simcoe in to dry hop!! I can't wait to taste the finished product.

Thank you, Yooper! This looks like it will be a regular brew at my place!

You would have to have an awful lot of hop bags for the continuous hop additions! :)

I just hook mine around the thermometer or handles, and burn my fingers opening it up for each addition. Apparently my fingers aren't worth another few bucks for another bag.

I never used bags before, but with my new brewing system, I have to bag up leaf hops or my pump clogs up immediately with ONE little leaf!

Since I add hops often, I use a big paint strainer bag and built a sorta kinda hops spider. It stays open (no burned fingers) and doesn't clog up my pump! I'll see if I can find a link or picture.

Edit- there's a picture! Up above, about 15 posts above mine.

I wrap my hop bag around pot handles and ad continuously . It's almost easier than not using a bag .

I don't know what happend. I brewed the extract version. Tasted amazing! Then a few weeks later, a very strange flavor. I hate it! copper nutty off taste.

This is my first attempt at home brewing and I'm trying to follow Yooper's DFH 60min Extract recipe... Everything is going great through primary fermentation (2 weeks).

How long does this need to ferment in the secondary? It looks from the recipe that you siphon it to the glass carboy, immediately dry hop, and then it's ready in a week... three weeks seems too short. Does it need to be in the secondary fermentor for a couple weeks before you dry hop?

Thanks in advance for your help!!

I don't usually siphon it to a "secondary", I usually dryhop in the fermenter and then package 5-7 days later. I like to have the hops aroma "fresh" and it seems like about 5 days is enough for dryhopping.

I don't typically age many beers, especially IPAs.

just brewed it today for the first time: changed the hops up a little due to the local homebrew store stock. 1 1/4 ounce galena, half bag at 60 minutes, 1 or 2 pellets till 35 minutes left. combined 1 ounce amarillo and 1 ounce citra in a bowl and put in 1 to 2 pellets till boil over. nottingham yeast used with irish moss. was going to dry hop 1 ounce amarillo and .5 ounce citra at 14 days. the beer is in the fermenter, i will update when it is in the bottle.

Did not get to this a couple weeks ago as planned, but I have spent all week stepping up my pacman. They are in the fridge ready to go! :D Tomorrow I will pull the trigger and brew this up, it will be my third all grain. Going with Yooper's original recipe. I will be testing out my new homebuilt hop spider on this as well. I am looking forward to tasting this. :rockin:

Cheers:mug:

Let us know how it goes!

I'm going to have to make this again, because I just got two pounds of leaf simcoe and two pounds of amarillo pellets! A 10 gallon batch just barely fits in my MLT.

Just finished with my mash and heating wort to boil. Temps and volumes were right on, preboil SG was 1.047. Here is a photo of the wort with my new spider and the anxious pacman waiting to attack the wort. I'm excited about this one.

I have brewed this 3 times. I subbed nugget and centennial hops because of LHBS availability the first batch, then forgot i subbed it for batch 2 & 3. The first batch was horrible... I read lots of stuff based on the flavour I was getting and thought maybe I was getting too hot of doughballs in the mash. so I used rice hulls and stirred often with no change. This last batch, I thought for sure it was my water, so I learned about water salts, and adjusted for IPA. I also changed from Dry hopping for 14 days to 5 days. Just cracked open a bottle last night and again it's horrible. I've been sampling all batches from 1 week to 3 months, and it doesn't ever get any better...

It seems so many people can do this no problem, and even the other beers I make are all good, this is the only one I cannot get. It's also the only one I'm doing with such high IBU.

Any ideas where I could be screwing up, and is the nugget/ centennial that bad of a combo? I know I love amarillo/ simcoe combo but I'm leery of brewing this again without fixing something else.

I just came to see if I really needed to secondary to dry hop. There's my answer. Thanks Yooper!

I don't know. I''m not a nugget fan (it's harsh) but I love centennial.

Can you make a batch with 100% reverse osmosis water, like from the "water machine" at the grocery store? And I'd recommend following the recipe exactly, and double checking to make sure your thermometer is correct!

All done brewing this. OG ended up a bit short at 1.063, BeerSmith2 estimated 1.066. My efficiency was around 69% for this brew which is the same as my first AG. Everything seemed to work out pretty smooth. The continuous hopping kept me busy during the boil. I was not able to sanitize and clean up during the boil like usual. It smells wonderful and tastes wonderful. I can't wait until this is finished.

Cheers :mug:

Mine is taking forever to carb - tried another last night. It's about 1/2 carbed. Tastes good though. Oh well - wait another 2 weeks... Drink different beer...

I really am starting to think its the nugget. I did do the second one with building from ro water. And I think my temp is OK, brewed some wicked wheat and blonde this summer

Brewed a 10 gallon batch of this today. Thanks for posting by the way. OG came out at 1.065. This is the first time making a big starter and I must say, what a difference 3L makes. Pitched about an hour ago and it is already bubbling away! Will post results with final product.

i thought i followed the recipe for partial mash, changed the hops a little due to lhbs. the only thing i can think of is the temperature i brewed it at. Can you name some of the reasons my OG would be lower than normal?
