First off I'm new to the forum as well as the homebrew lifestyle. I just brewed the extract recipe yesterday and so far looks great. I just had a question about the primary. If I were to leave it in the primary for closer to three weeks rather than two would that create any significant difference in the end product? Thank you and thanks for the recipe

Nope.. 3 weeks is fine, in fact it gives the yeast time to clean up their mess. They've pretty much proven that autolysis is not an issue. I leave all my IPA's in primary for at least 2 weeks, and then just dry hop right in the primary for another week. Cold crash after that, then package. I get SUPER clear beers, with just whirlfloc in the boil.
 
I may have missed this in the 90 pages of comments but if I'm doing a full boil extract do I adjust the hop quantities in oz's? I see 1.25 oz of warrior. Do i use the same our should i go with all grain since that would be a 5 gallon batch? Thanks

For a full boil, you can follow the AG hopping recipe. That will be the same.

Waiting for a break in the weather so I can brew this!
 
Rebel Brewer has them. Northern Brewer just got in a shipment of full cone Simcoe, but no pellets yet. Check Hops Direct too
 
I had to drive an hour to the HBS on the other side of Houston for them. But man do they smell good! Just bottled it today and even flat it tastes AMAZING.

Did you go to B&S or DeFalco's? I've never actually gpne to DeFalcos, but I'm considering it since they actually carry Wyeast.
 
Just got some from Brewmaster warehouse. Mmmmmm

Thanks, this is the best beer I ever made thanks to Yooper. I purchased Simcoe hops at my LHBS for the first batch. Went back to get some more for a second, and they were out of them. Told me they couldn't get them anymore.

DeFalcos. I live on the north side, and BreItYourself was all out. Where's B&S?

On the other side of the Earth for you man. lol Its in Seabrook. I just kegged my batch of this, but I used a few different hops to give it more aroma and slightly more IBU's. Its a great beer. Yooper ftw! :rockin:
 
I just opened my term bucket to add the dry hops. The hop smells were awesome but I got a serious alcohol smell in there too. Actually kind of startled me. Is it supposed to be like that? This is my first batch so as a noob I apologize in advance if I'm fretting over nothing.

Are you sure it was an alc smell and not the sharp smell of C02 either way a bit of time in the bottle or keg will give the hot alc flavor to mellow out

It was definitely sharp. Initially made my eyes water then quickly dissipated. So I'll just go with CO2 for now so I don't worry for two more weeks. THANKS. I am annoying everyone I know in how excited I am to get to drink this batch.

Not annoying at all. Its most likely the CO2 and wort combining to give you that smell. Happens in my brews all the time. Welcome to the obsession! :D

I had the exact same thing happen to me, I actually asked the same question in this thread. Strong alcohol taste and smell (I tasted my hydro sample). I just bottled this batch on saturday the 5th, and the smell had died down alot and I still noticed the tast a bit, but my brew buddy didnt taste it at all. So I am still nervous but thinking good thoughts though!! This is my second batch ever.

On a side note our first brew was a brown ale and we tried the first bottle on saturday. It tasted terrible!!! There was no carbonation and the taste was unexplainable!! I am going to chill another one down this week and crack it this weekend...And then find the appropriate spot on this forum to ask questions about what went wron...O well and good luck to you :)
 
I just bottled mine today and it smelled like... DFH60! Seriously, I don't know what could be the alcohol smell. I smell the simcoe and amarillo and it's amazing. The hops do have a certain sharpness to them, maybe that's what you're smelling. If you're in the neighborhood of the recipe you shouldn't be smelling alcohol. Mine is 6.8% abv
 
Thanks for the recipe. Brewed 11 gallons this past weekend and hit my numbers. DFH is 6% and my OG was 1.073, so it'll probably end up 7-7.5%. if the taste is similar i'll consider it a homerun.
 
Has anybody tried keeping it in the primary only a week then moving to the secondary and dry hopping for two weeks? Do you think this would work? Thoughts and ideas are greatly appreciated!

I had it in primary for just 12 days. It was at the FG for 2 days already so I racked over to secondary.

if fermentation is done, then yes. If my initial gravity reading after 6 or 7 days is 1.016 or less, I transfer. If it's slightly higher (1.20+), I'll waiting until its in the finished range of 1.010 to 1.018. People do say that 3 days of constistent readings is a fail proof method, but my method hasn't failed me yet, plus checking that many times increases the risk of infection. A hydrometer tells all, so, yes, it can be done.
 
I saw that AHS offers a 60 minute IPA clone. What caught my attention was that they recommend WLP002 english ale or Wyeast Ringwood ale for this beer. Has anybody ever tried those strains with this recipe? I am wondering how much of a difference it would be instead of using WLP001 or Pacman
 
Anybody? Was considering brewing sunday. Any recipe changes or updates to it. I read quite a bit but not all 93 pages. Someone chime in with the closest possible to the original.

Why not dry hop in the primary? I'd wait until a few days after I hit FG, and then dump my dry hops into the primary. I'd leave them for 7-10 days, then I'd bottle. No point exposing the beer to oxygenation and infection more than you have to.
 
The guys at my LHBS have been experimenting with dry hopping at different stages for the last year or so. They do a lot of dry hopping at the 4-7 day mark of primary fermentation, and have had no issues with it. The yeast movement helps to circulate the hops and has seemed, to us at least, to give it a better hop bite, and aroma. I myself dry hop in primary and have had no problems
 
I just tasted my first of this recipe tonight and it's GOOOOOD!

I did primary-only. 15 days to bottling. last 9 days dry hopped, and last 5 days with added gelatin fining.

The clearest beer I've ever made. The hops taste and smell are incredible! I think I have a new favorite!

I just read through about 35 pages of this post and it sounds like a great recipe. I want to brew this week and have Warrior and Simcoe but no Amarillo.

I have Centennial, Cascade, Ahtanum, and Williamette on hand. Does anyone know if any/or a combo of these hops will make something similar to the original? I have never brewed with these hops before so I'm not sure which is best. Thanks.
 
By the numbers and substitue guide on beersmith I would say go with cascade. Its not going to be the same, just similar. Centennial is gonna be a little higher alpha but still recommended, just less the same. I love he aromatic presence cascade gives. Id personally go win that but it's your beer my friend.
