I have used extract before but in bottles and not in a keg. I have found that the flavor of the extract becomes less syrupy tasting with age. About three weeks in a bottle, as long as it takes to carb. I brewed up a beer that called for peach extract and kegged it yesterday and it had an extremely overpowering syrup taste. Will the taste mellow out after the beer is done carbing or does it have to age about 3 weeks?
