I’m looking for a distilled water mash pH for 2-row base malt to be used in EZ 3.0. In Kai’s experiments he measured a Rahr 2-row mash to be 5.56 (@ room temp). This seems a bit lower than other references I’ve seen. I’m sure it varies somewhat depending on the maltster but at this point I’m collecting as much information as I can. Any help/advice/thoughts would be appreciated!

AJ points out that using Kohlbach's information, the pH of a 2-row pale malt should be around 5.7 to 5.8. Kai did discover and point out that Rahr 2-row malts produce a suspiciously lower mash pH, suggesting that the maltster partially acidifies their base malt. I have requested information from Rahr, but they have not responded.
