Discovering yeast taste.

If I was to start culturing wild yeast how would I tell what characteristics that yeast brings to the party? Maybe an average size beer 1.040 light bittering hops and no aroma hops. Ferment like normal with wild yeast and tase the aftermath. Would this be a way of figureing out what that yeast contibuted.
