I am looking to buy larger than 3 pound amount of LME for a few brews that I have planned. I am really green in this dept, but some online sites call a variety of LME "Gold" I have not seen this variety in other brand names. WHat is it equivalent to? or is it proprietary?

If your looking at Briess it's equivelant to a standard Light Extract, the lightest they have is Pilsen Light. You can use the light as a base and use Specialty Grains or your Partial Mash to make up for the color/flavor you won't get with the lighter extract.

Get DME it stores better, 1lb of DME is equivelant to 1.3lbs of LME. I just bought a 50lb bag from NorthCountry Malt for $2.40/lb after shipping to Ohio.

It is actually Northern Brewer. The recipe I am attempting to put together calls for 6.3 pnds of Gold Malt Syrup. AND a pound of Golden Light DME. ( THe DME is not a late addition, full 60 min boil...)

Thanks for the advice so far

Is spraymalt the same as DME?

Is there a conversion (like the 1:1.3 for LME) that should be used due to the processsing difference?

check the ingredients on the manufacturers website. see whats in there and compare to the ingredients in other extracts from other manufacturers.

Thanks, Tipsy, I was poking around and realised that Norther Brewers Gold LME is proprietary. (as far as I can tell it is a blend of light and something else.)

Sorry, let me reword....

It is just 100% spray dried malt extract.

At my LHBS I cannot source liquid malt extract or "non spray" dried malt extract. Should spray dried be compensated by weight in recipes. Is it better refined, thus lower water content, than DME?

The online HBS that I looked at list it separate from DME.

THIS, is the ONLY issue I take with Extract in General. Bad labeling and no technical specs.

I mean really, there should be an Analysis sheet for extract that at minimum includes listing of all malts and adjuncts and their proportions as well as actual mash parameters used to prepare.

I don't think spray dried is going to be a substantially different weight than non-spray dried. The difference between DME and LME quantities is due to the weight of the water.
