Just want to say I did my first extract, it was not as bad as I thought it would be either. I was as methodical as I could have been. I ended up adding the yeast at 11 pm and was half expecting to find a mess all over the floor when I came down this morning but no, just a nice sound of gurgling as I got to the kitchen and no mess.:mug: :ban:

Can't wait now. Will be a good few months I guess, by the time it's bottled and mature enough to drink.

that is what I brewed. Anyone done this or anything similar? What was it like?
 
Congrats! Sounds tasty, I never have done a Belgian before, but that sounds good, let us know how she tastes! :mug:
 
Looks like a solid recipe - should be tasty!!!

Start another one as soon as you can, because 5 gallons doesn't last very long - especially if it's good!!

I am going to do an oatmeal stout next. Your right there, it does not last long. Is there anythig that does quickly that would be ready to drink around xmas?

If you brewed a hefeweizen or maybe a lower gravity english ale, like a mild, those might be ready by then.......assuming you're bottling, just prime and keep a warmer part of the house so it carbonates faster. If you're going to, I'd definatley not drag your heels, it might be a little green still then should be drinkable......and you probably won't be able to use a secondary for long, if at all......just not enough time between now and then.
 
I just realised I never did update this thread.
The above Belgium recipie was very good. Nice and smooth but with the kick you would expect. Brewed this twice and it was a good both times around.

Will have to do it again as it's been a few years!
