Diastatic LME + specialty grains

I've been brewing using LME + specialty grain steep. I notice that AG recipes include specialty grains in the mash. I use United Canadian Pale LME, which is diastatic.

Could I do a partial mash using this extract?

Are there any sugars left in carmelized or roasted grains that get converted in the mash?

Would there be any benefit to doing an extract partial mash with the specialty grains that I usually just steep (Crystal, Carapils and Carafa)?

If so, how do I check the efficiency? By the amount of attenuation?
