Brewed a Bourbon porter from northern brewer on Friday. Wort in fermenter at 70 degrees, pitched yeast and have activity from blow off hose in 2 hours. Overnight was steady bubbling and temperature was between 68 and 70 all night. Went to work and when I came home temp was reading 76 and had very vigorous bubbling. Since instructions said max temp is 70 degrees I lowered to 68.

Well since then I've had no activity in blow off tube bottle. Any ideas or concerns? Should I just keep my Ftss at 68 and ride it out till 2ndary fermentation?

I've used Windsor in the high 70's with no off flavours, so nothing bad will happen with your beer. Windsor is agressive and will finish fermentation in 2-3 days. So if you can control the temperature, start at 66-68F the first 2 days and raise the temp. every day with 0.5F. I've just " dry beaned " a Brown ale and oaked a Porter fermented with a mix of Windsor and Nottingham.

OG for Brown was 1.082 ---> Brewed it on Nov. 3 and today the FG was 1.022 ( lactose added in the boil ) ---> 72% AA / 7.9% ABV
OG for Porter was 1.090 ---> Brewed it on Nov. 3 and today the FG was 1.0175 ---> 79% AA / 9.5 % ABV

So you should raise the temp. to 68-72F to help the yeast finish.

Thanks, I've set my low temp to 68 and high to 72 for now. At the moment it's staying right at 70.2
