Apple cider is a seasonal thing but I'm wanting to make a Cyser. My question is can I use apple juice instead of apple cider?
 
Absolutely can use apple juice. I have used Frozen Apple Juice Concentrate (FAJC) in a number of Cysers that have turned out very well. Admittedly probably not as good as fresh pressed cider but pretty good non-the-less. Mix it a little strong 1.065 to 1.070 before adding honey. Carries the apple flavor a bit better.
