Going to make my fourth batch of mead tomorrow. While daydreaming all day at work of different recipes I could do I decided to do something like this;

1 gallon recipe
1/2 gallon apple juice
some tart or green apple juice from concentrate
2# clover honey
1# buckwheat honey
couple sticks of cinnamon
nutrients
k1v-1116

Thoughts? Suggestions? Concerns?
 
Yes, I'll comment......

I'd do that but leave out the green/sharp concentrate and cinnamon.

Then ferment it like that.

Once finished a small taste to see what the level of apple flavour is, using the concentrate to modify. Also assess whether its likely to need back sweetening and the cinnamon. ....
