So I got a grain mill (Crank and Stein 2D BTW), and of course I'm eager to put it to use. I feel like I know what a good barley crush looks like but what I don't know is how much to crush the wheat. Its white wheat. I know there's no husk so no fear of shredding, but I also know that I don't want all flour...

So what am I looking for? Sorry if this comes up often, I did look around but I didn't see any posts.

Here' s my recipe if you care or want to comment on it...

5 lbs white wheat
5 lbs Briess 2-row
8 oz Honey malt

.5 oz Cascade @ 60
.5 oz Amarillo @ 15
.5 oz Williamette @ FO

I may add for honey to thin the body a bit and I'm thinking about 1 oz dried sweet orange @ 10.

I can't comment on the wheat either, as I have yet to make a AG wheat beer, but I would definitely go with fresh orange over dried, better flavor, cheaper too!
 
Yeah I might just use some fresh peels, or zest. Maybe I'll add grapefruit zest too.
