Hi all, I don't know if anyone actually knows the answer to that question or not (though I know that Chad does come on HBT sometimes). I was able to procure some Crooked Stave Yeast (CSY001 I think?) and have built up a pretty reasonable sized starter over the course of 3 weeks. I'm planning on doing a 100% brett in a belgian blonde style. My question is what the attenuation of this strain will be when used as the primary/only yeast. Right now I'm estimating it at 74-85 based on the numbers for others bretts. Any thoughts would be much appreciated. Cheers!
 
From listening to and reading interviews and presentations, I'd think it would be higher than that. I can't remember specific number, but I'd think closer to 90%.
