This is an extract recipe adapted from an all grain braggot. My dad has been getting tons of wildflower honey from his two hives. The honey is fairly dark with tons of aromatics much more than clover honey you get from the store.
This is my first recipe so bear with me on this.

  • 6 lbs. pale LME
  • 1-1/2 lbs. Crystal 20L
  • 1/2 lbs. Crystal 60L
  • 3 lbs. Honey @ flameout
  • 1 oz. Cascade @ 60 min
  • 1 oz. Cascade @ 5 min
  • WLP001 California Ale yeast with starter

From BeerSmith:
OG: 1.060
FG: 1.005
SRM: 11.7
IBUs: 19
ABV: 7.2
 
I think in order to qualify as a braggot, honey must be at least 50% of the fermentables. I'm doing one using Northern Brewer's Bourbon Barrel and using 6 1/2 pounds of honey added after the boil, and using Nottingham yeast.
 
I am wrong, there is no requirement to have a specific amount of honey. According to BJCP it has to be a harmonious blend of beer and mead.
