I will be bottling into standard 750 ml wine bottles soon. What size corks do they take, and is there any difference between the materials available?

It will be a mead, if that matters.

I plan to use 750 ml green bottles and have already purchased 1.5 x 8 corks along with a simple, inexpensive hand corker. I tested it yesterday and everything worked great. (I'm new to this and yesterday was literally my first attempt at corking a bottle.)
 
8's if you're hand corking, 9's if you have a floor corker, is what I was always told.

Corks are priced differently on purpose. For longer storage of your mead, buy more expensive corks. If you plan to drink it all within a year, then buy the cheapest ones.
