Hey all,

I've been trying my hand at cooking and smoking meats underground. I tried to research this technique and found little info that I found useful. So as a homebrewer of many types, I decided to write up my own technique and post it on Instructables.

My next batch of beers will be boiled over the hot coals in this same pit. I've read several posts here and most of the concerns were about boil overs, but I did no see anyone confirming this issue. So, I will post on HBT when I get all of my gear back up.

Anyone else cook underground?

Next meats to cook: Pork, turkey (holidays!), and may goat/lamb. I would like to slow smoke salmon too.
