Believe me, I'm always up to trying new beers and changing my opinions. I'm mostly speaking from the commercial examples I've had in the past (koko brown and my own attempt at using raw coconuts in my own brew)
where did you find extract? or was it made with vodka and shaved coconuts?
I follow you -- the one I made is much more "coconutty" than the commercial one I've tried.
I used 16 oz shaved coconut. I just toasted in the oven, tossed into a large grain sack that I had soaked in Star San, and then put the sack into the primary a week after brewing (I generally try to avoid using a secondary, and would have sucked getting the coconut into/out of a carboy). I didn't do anything else to sanitize the coconut on the theory that it came from a sealed package and was then heated in the oven sufficiently to hopefully kill off anything nasty, especially since it was going into beer that had probably hit its FG already.
