Just a reminder to those of you who (are like me) get in a hurry to keg a beer and just set your vol of O2 to a standard setting. I learned the hard way by doing this. Each style of beer benefits from a correct vol of o2. We spend alot of time making beer so why not do it justice and finish it right. My screw up was a 60 schilling that I put on my IPA vol setting. It's now nice an bitter, almost astringent. Please learn from my mistake.;)

Hopefully you are using CO2 and not O2:D

Just bleed off the pressure and then burp it every once in a while untill you are at your desired pressure.

That bite you are getting is most likely Carbonic acid. If you are drinking it right away, all the CO2 in solution probably hasn't disolved yet. Once you let it sit for a couple days you should be OK. Bleeding off the excess pressure should help too.
 
This is why I went with the dual-body regulator (3 guages) and 10' of 3/16" beer line on each tap... An English style bitter shouldn't be carbonated at the same level as a 'spritzy' belgian wit...

Seems that universal carbonation (at 2.3-2.4 volumes) works for a lot of people here though... Just not my preference.
 
The 60 Schilling had actuallly been at 12.5 psi of Co2 for roughly 8 days. I DON'T shake my kegs. I think the bite most likelycould have been carbonic acid, but I also think I over carbed for the style itself. I did take it off the gas for awhile and burped it every couple of days so I hope it calms down befor I throw another wave of gas at it. I had just set it and forget it....at the wrong psi. FWIW I keep my keggerator at 38 deg roughly.
 
That is one of the disadvantages of my system right now. I have one CO2 tank, one regulator and one three way manifold. Right now I have a Belgian Golden Ale, and a stout on the gas and an IPA is going on this weekend. So, as you can see, three very different styles, all getting the same pressure. What it comes down to is just an average pressure like was mentioned. My Belgian is not carbonated up to style, and my stout is probably over carbonated. However, it is fine for me. Maybe eventually I will mess with it to get it 'perfect', but it is close enough for me.
