I brewed an extract pale ale a week ago. Everything is happening as planned except when I sampled a bit at my gravity reading the grapefruit flavor was too strong and bitter. Is there a good way of sweetening this going into the secondary or can I expect the flavor to mellow over the next 2 weeks. My recipe included 6.6 lbs LME light, 1pound of specialty grains(10L, Carapils), 1 oz. each of Sorachi Ace and Amarillo at 60 and 15 respectively and 1 oz. Citra at 5 and 2 so I don't think I over hopped it. Maybe just too grapefruity of a combo. Suggestions? Chill out?
 
+1 I would wait a couple more weeks before making a final decision. I generally sample my brew at each stage (from the OG sample, when racking to secondary, when bottling, about 7-10 days after bottling, and the final product), and each sample has a significantly different taste. In my experience, the carbonation/conditioning stage usually helps mellow out my brews. Good luck and let us know how it turns out!
 
I tasted it again when it went into the secondary and the flavor was a bit less intense. So, there's hope. It made the airlock vodka taste outstanding.
