Hello. Kind of new to brewing. I’ve been dabbling for the last few years but haven’t been exactly scientific about it. I did the basics, followed recipes, and produced alcoholic liquid of different flavors.
This past Saturday 2/24 I put 5 gallons of cider in the fermenter at 1.090specg and noticed the bubbles had slowed today so I drew some off to read it. It read at .900 which gives me 24.94%ABV. I’m calling ******** on myself. Is that possible? Did I misread something?
I used Red Star HOZQ8-529 Premier Blanc Wine Yeast (activated prior to pitch), and trader joe apple cider, 4 lbs white sugar and 2 lbs brown sugar. Some spices like cinnamon, clove, and vanilla, nothing crazy.
Stored at about 67° the entire time. I did degas daily for the first couple days.
What am I missing here? Thanks!
