Hi!
I brewed a 3.25 gal. batch of Xmas Ale.
My O.G. was 1.089 & after 3 weeks my F.G. was stuck @ 1.049.
I tried stirring things up & had no change in a week so I made up another starter & pitched. My gravity went down to 1.039 & stayed once again for the past week & a half.
Do you think this beer is just finished or do I need to wait it out longer?
The beer tastes real good, but I'm afraid to bottle.
I mashed @ 156 degrees for one hour, fly sparged & had a pre boil of 1.070

7.37 lb American - Pale 2-Row
9.82 oz American - White Wheat
9.82 oz American - Caramel / Crystal 40
2.45 oz American - Special Roast
1.23 oz American - Roasted Barley
9.82 oz American - Pale 2-Row
HOPS
1.23 oz Domestic Hallertau Pellet 3.9 Boil 60 min
0.3 oz Cascade Pellet 7 Boil 10 min
0.3 oz Cascade Pellet 7 Boil 5 min
OTHER INGREDIENTS
2.25 each Cinnamon Sticks Spice Primary 0 min
1.13 oz Ginger Root (fresh) Spice Primary 0 min
0.56 tsp Irish Moss Fining Boil 15 min

White Labs - London Ale Yeast WLP013
