Choosing a temperature probe?

Hi all:

I'm looking at buying a temperature controller, most likely a Love TS S2 2100, for a fermentation chamber. I can't find any information on the difference between the various temperature probes though. Is there one that is particularly well suited brewing?

I would go with a stainless one. Everywhere I've read talks about using stainless steel.
