Chocolate Cherry Quad Advice

Never done a Quad. Tried Perus Nitro from DeBrabandere and was suitably stunned. Any advice for someone who has never used these speciality malts and the recipe overall ?


WLP540 Abbey Ale IV

12 lbs pilsner
.75 lb Pale Chocolate Malt
1/2 lb Special “B” malt
1 lb Belgian Aromatic malt
1.2 lb Brown Sugar (add during boil)

3 lbs tart cherry Puree

1oz German Northern Brewer (60min)
1oz Hallertau (15minn)
1oz Styrian Golding (10min)

8 oz cocao nibs in secondary
 
So I can't speak to the recipe for a quad as I've never done one. But I did a chocolate cherry Imperial stout 2 years ago.

I did 6lbs of sweet cherry puree and 8oz of nibs toasted at about 350 degrees for 10 mins. I thought that was a perfect amount in a stout. The nibs were a tad stronger than the cherry puree but the cherry flavor was definitely there on the backend. I thought it was great!

As far as the rest of your recipe someone else will have to comment on that
