Complete newbie here and I was super excited about my first batch of homebrew. My beer has been bottled for about 3 weeks and I popped a few in the fridgeafrator this morning, to be ready to drink this afternoon.
The beer tastes just fine but there is a lot of carbonation, the head takes a while to go down and I don't have all day!! :D
I guess my question is this....do I just rely on the kits to have all the ingredients exact or is there a rule of thumb on how much priming sugar to add to 5 gallons (it came with 5 ounces of priming sugar)?
I just bottled 5 gallons of NB's Nut Brown Ale and I'm keeping my fingers crossed that it's not as foamy. Thanks ya'll ! It's a holiday today, but I'll hit up their help line in the next few days for their recommendation.
 
There is no "rule of thumb" that is accurate for carbonation. Getting the amount of sugar added to get the perfect carbonation requires some calculation. Fortunately, someone has already done that and posted a program to do it for you. https://www.brewersfriend.com/beer-priming-calculator/

The carbonation calculators are really helpful. The amount of priming sugar included with a kit is about the maximum someone may use for a beer but isn't the right amount for all beers as you found out. It is more cost effective for the kit makers to include a standard size pack of priming sugar rather than trying to customize the amount.

You can reduce the foaming with a slow gentle pour down the side of the glass. Start out with the glass nearly horizontal. Hold the bottle towards a light source as you pour. Stop pouring when you see the sediment from the bottom approaching the bottle shoulder. The sediment will create nucleation points to increase the initial foaming.
 
If you added all 5oz of sugar to 5 gallons that will cause it to be extra foamy. My last 3 ales were all carbed perfectly with domino sugar cube dots. I got the idea from another thread on this forum. 1 cube per 12oz and 2 cubes per 22oz bottle. It's also much cheaper than buying sugar included with your beer kits.
