I have a barley wine that has been in the bottle almost 3 months now... Checked one a couple weeks back and still flat tastes good though.The earliest I've ever checked a beer is 6 days, that one surprisingly was ready! But I let it sit for another week before chilling any. I've got a Barleywine bottle conditioning right now that has almost no carbonation at 2 months, but it's 15.47% so it's going to take a while.
