So I'm finishing my first sour and I'm unsure of how much carnonation I want to put into the bottles. I wanted to reach out and find out what everyone thinks. Here's my finished product.
Brewed a Partial Saison with no finishing hops. Added Brett, oak chips, and 2lbs of raspberries into the secondary. Let it ride the wave for 10 months. OG=1.072, FG=1.010. The little tasters I have had were very, very light sourness evenly balanced with the sweetness from the raspberries.
I was thinking about 2.8-3.0 volumes of CO2 to keep it light and bubbly. I've never done volumes that high and am hesitant of bottle bombs. Thoughts?
