I've always done bottle carbing but would it work to measure out sugar and put it in my fermenter once it's done fermenting, for carbonation? Any extra steps I'd need?

You'd need to seal the fermenter, so it's probably not a good idea if you're using a plastic bucket or glass carboy. Either the pressure will push out the bung/lid or you'll break the glass.

There are steel conicals on the market that can handle some pressure. I'm not aware of any glass/plastic fermenters that would allow pressurization.

If you keg beer, you might consider racking the beer to the keg and adding dissolved bottling sugar when you rack. You only need about 2/3 of the normal amount of sugar for "keg priming" as it is a more efficient process. It's a good way to clean up beers.

Good Luck
