I was at the grocery store and I saw the plastic carboys that are used for water. Could you use those for a fermentation container?

You can, it's not like they'll explode or anything. But, they are not the correct type of plastic and are oxygen permeable so you could end up with funky flavors. Basically, they're not made for making beer....
