Can someone scale this from 6 gallons to 1 gallon please?

4gram columbus 60min
4gram columbus 15min

Irish moss 15min
16.2gram Fermax 10min

Scaling is a linear proposition as it turns out, so just divide by 6. Also, unless you plan on several rests, including a couple at low mash temps, you should switch that 6-row to good old 2-row.

Note that your boiloff is a constant, not a percentage, so your volumes will not just be reduced by 5/6.
