Critique wanted - simple fresh hop 3-C IPA

Hey all,

A friend recently harvested their hops, and recently gave me 5.1oz of Cascade and 2.2oz of Chinook. They'd like me to brew a fresh hop pale/IPA for them. I quickly threw together the following recipe - any and all critique is appreciated!

HOME BREW RECIPE:
Title: Shady Ackers IPA

Brew Method: All Grain
Style Name: American IPA
Boil Time: 60 min
Batch Size: 5.4 gallons (fermentor volume)
Boil Size: 7.3 gallons
Boil Gravity: 1.045
Efficiency: 72% (brew house)


STATS:
Original Gravity: 1.061
Final Gravity: 1.011
ABV (standard): 6.55%
IBU (tinseth): 64.99
SRM (morey): 6.85

FERMENTABLES:
10.5 lb - American - Pale 2-Row (84.7%)
1 lb - American - Caramel / Crystal 20L (8.1%)
0.5 lb - American - Carapils (Dextrine Malt) (4%)
0.4 lb - Canadian - Honey Malt (3.2%)

HOPS:
1 oz - Chinook, Type: Leaf/Whole, AA: 12, Use: Boil for 60 min, IBU: 40.21
1.1 oz - Cascade, Type: Leaf/Whole, AA: 6, Use: Boil for 10 min, IBU: 8.02
0.6 oz - Chinook, Type: Leaf/Whole, AA: 12, Use: Boil for 10 min, IBU: 8.75
2 oz - Cascade, Type: Leaf/Whole, AA: 6, Use: Boil for 5 min, IBU: 8.02
2 oz - Cascade, Type: Leaf/Whole, AA: 6, Use: Aroma for 0 min
0.6 oz - Chinook, Type: Leaf/Whole, AA: 12, Use: Aroma for 0 min
3 oz - Centennial, Type: Pellet, AA: 8.9, Use: Dry Hop for 8 days

MASH GUIDELINES:
1) Temperature, Temp: 152 F, Time: 60 min, Amount: 4 gal
Starting Mash Thickness: 1.25 qt/lb

OTHER INGREDIENTS:
0.5 tsp - Irish Moss, Time: 15 min, Type: Fining, Use: Boil
0.25 tsp - Fermax, Time: 10 min, Type: Other, Use: Boil
1 tsp - Gelatin, Time: 3 days, Type: Fining, Use: Primary

YEAST:
Fermentis / Safale - American Ale Yeast US-05
Fermentation Temp: 65 F

NOTES:
4 gal mash strike 165
4.75 gal sparge
7.3 gal pre-boil
5.4gal post
 
Personally, I would move the Chinook to bittering only. I think it will overpower the Cascade and Centennial in the aroma
additions.

Hmm...I could save that 1.2oz of Chinook for bittering in one of my next batches, and have Cascade as the sole aroma hop and Centennial as the sole dry hop. Is Chinook really that potent as an aroma hop, even when it's 1/3 the amount of Cascade being used?
 
I make a black ipa with 4 C. Cascade columbus centenial and chinook. 1/4 each. I dont see a issue wth using chinook with cascade and columbus. But I would use 1/3 of each at 10min. 1/3 at flameout and 1/3 each at dryhop. I dont understand why someone would use a single hop per stage unless you know what you are looking for.
