I wanted to put raspberries in a brett saison and I sanitized the raspberries with campden. I let the raspberries sit for 24 hours. The campden leeched the color of the raspberries; so in order to save the color I pureed it all and put it in the secondary.
My question: Is there enough campden left to kill my yeast in the secondary? I wanted the brett to eat the raspberry sugars and at 12 hours there is no sign of fermentation.
If I did kill the yeast I happened to save the yeast cake in a sanitized jar and I plan to pitch that if no activity happens.
Any advise/comments would be appreciated.
