Calypso pale ale

I was competing at a brewery, we were given a list of ingredients to brew with on the spot. I went with calypso and simcoe hops for a pale ale.

I've never used calypso, it is an interesting hop indeed. Apple, peaches with the simcoe adding a citrus backbone to it. I'm definitely surprised, happy still, but surprised.
