C3C Krausen won't drop!?

It's been one week today, since I pitched my US 05 yeast onto my C3C. Seems like by now I'd be ready to go to secondary, but when I checked, the krausen still looked like a big thick blanket of cappucino on top!
Shouldn't this have fallen by now? I really want to get going and get this in bottles, but I also want the krausen to be on the bottom first...
Thoughts? Ideas?

Leave it a while longer, mine was in primary for 3 weeks before i bottled, and there was still a lot of krausen on top.
That yeast takes a while to clear in my experience.
 
Don't rush it. Every fermentation is different, and you can't measure it in time, only gravity. The only thing you can do is wait, so I suggest you do just that. Otherwise, you'll screw it up. Any reason you're transferring to secondary?
 
05 will do that. I find I need at least 2 weeks for 05 to do it's thing, even if I pitch a starter. Check the gravity after 2 weeks. If it's on target, then cold crash it to clear the top.BTW, you don't necessarily need to secondary, especially with this recipe.

Thanks, the only reason I was/am going to secondary is to add some gelatin, because I screwed up and forgot the Irish Moss when boiling? Was told that this will help clear it up better before I bottle.

Yes?

No need to secondary for that unless you're planning on harvesting the yeast. You can add the gelatin directly to primary and skip the secondary all together.
 
So can I just go on and put the gelatin in primary now with all the krausen lying on top?

you add gelatin to cold beer

have you checked your gravity yet ? are you at your final gravity or where you want to be?

I use 05 all the time but I top crop mine for reuse so I skim the krausen to save

cold crashing will make it drop

if you took a sample to test gravity how cloudy was it ?

Sometimes S05 does that for me, as well. I'd wait at least 3-4 more days before doing anything at all, and preferably an entire week.

Once the krausen drops, it needs a day or two to start to clear. S05 takes longer to clear for me than other strains, so I give it that time. After that you can cold crash to clear it more, and add your gelatin if you are using it.
