I am conducting a science fair experiment involving the fermentation of several carbohydrate sources like barley, wheat, corn, rice, and possibly potatoes. I've been searching on the internet for the byproduct of fermentation and have come across things like nitrogen compounds, but I need to know what specifically is produced other than alcohol and CO2. If anyone knows or can point me in the right direction, it would be helpful.
 
Fermentation produces alcohol and CO2. The yeast create a host of other compounds in the process of growing, living, fementation and dying. Look at the off-flavors discussion in Palmer's book for examples.
