I think the gelatin sticks to the cloudy stuff, and then sinks to the bottom. If I understand right, it basically pulls stuff out of the beer and down to the bottom to make the liquid clearer.
I have not noticed any negative effect from adding the gelatin. Plus, the ratio of gelatin to beer is pretty small. Not like making a tasty 5 gal jello dish.
Anyone else who knows the science behind it or has more experience, please correct me if I am mistaken.
