You can keep it covered and re-boil for 15 minutes when you're ready to resume.

I hesitate to say you can use campden tablets. I've never heard of anyone adding it to wort before, so I don't know if there would be any undesirable side effects.

Adding it to wort is fine. It will kill any possible wild yeast at higher doses. 1 tab treats 20 gallons for chlormine but I'm not sure of the dosage for yeast and bacteria. Maybe check some of the wine making sections of the forum where it is used for that purpose. Keeping it cool will also help. I'm not sure how much time this still buy you either.

This would be a great time to kettle sour a beer. Add some lacto or plain yogurt and keep it warm for a day or two. Boil to kill everything and ferment as usual.

Worst case either way you end up with a slightly soured beer.

Skip the secondary and give your wine more time in the carboy. Your beer doesn't need secondary and your wine may benefit from the extra time.
