I get all weak in the knees for English/Irish/Scottish ales, so I always have Goldings, Fuggles, Williamette and other English varieties on hand. For American styles, Cascade and Centennial. For Belgians, Hallertau and Tettanger. Of course, this is only from my perspective and recalling from memory what I have in the freezer.
