Anyone else have this supposedly laggard west coast dry yeast kick off to a second round of activity? I swapped blow off tube with airlock after things slowed down for a bit. Air lock bubbled a bit for a couple days.

This morning airlock is all cloudy and yeast colored. What the heck??

I've used it a few times and find it does have a long lag time. Interestingly Danstar advertise that there's no need to aerate your wort before pitching BRY-97, as they've 'configured' the yeast to work well without aeration. I'm guessing that's why it has a longer lag at the start.

However, I haven't had it stop then start again...you sure it's not just co2 trapped in your beer during fermentation? I'd go by gravity readings to see if it's still fermenting or not, not the airlock. I've had airlocks stop bubbling on beers for 3 days, then I move the fermenter and it starts bubbling again...it's just co2 escaping from the beer.

Oh, it was only about day four of it's fermentation. I am no where near planning to take gravities yet. Just was weird to have it stop using the blow off, then clear air lock for a day, then clouded up and yeasty again.

(CO2 coming out of suspension wouldn't be expected to throw yeast into air lock.)
